Tomato and potato recipes.

A selection of recipes, reflecting the use of these vegetables in many different cuisines. Each recipe suggests a recommended variety whose particular qualities match the recipe in question.

Mexican salsa

Ingredients (for 2)

Round medium sized tomatoes will be perfect for this recipe. They have the right balance between juiciness and fleshiness necessary for the texture of this dish.

  • 3 Ripe, round, medium tomatoes
  • 1 small onion
  • 4 Serrano Chiles (medium heat and size)
  • Small bunch of fresh coriander
  • Quarter of a lemon
  • Salt
 
Directions
  1. Chop the Tomatoes and the leaves from the coriander.
  2. Chop the onion and chilies finely.
  3. Mix all the ingredients together in a bowl
  4. Add salt and lemon to taste, mixing in well.
More

You may also add finely chopped peppers (red or green) as in the picture above. The quantities of each ingredient are not critical. Play around with the proportions to find a taste that suits you.
